Toothed pistachio nuts can be created by breaking the nuts of round pistachios, Ahmad Aghaei pistachios, Akbari pistachios, or jumbo pistachios.
Since the size of this type of kernel is smaller than the cotyledon kernel, the price of this type of kernel is lower than the cotyledon kernel.
Many industries and production workshops prefer to use this type of kernel to reduce production costs.
This type of kernel can be used in applications such as baking sweets, baking cakes, preparing Qatab, preparing pistachio powder, halva, banana milk, and ice cream.

Wheat pistachio kernel

Since the size of these kernels is the size of wheat or a little bigger, that is why they are called wheat kernels.
While this type of nut is cheap and can be used to reduce production costs, its size is small and the color of the shell on the nut is brown, which is why it does not look beautiful.
This type of nut can be extracted from Round, Ahmad Aghaei, Akbari and Jumbo pistachios.
Of course, in some units and industries that use crushed or powdered pistachio nuts; And the size of this type of brain does not cause any special problem for them, they can use it easily.
As mentioned, the most important challenge of this type of kernel is the color of the brown shell on this kernel; Of course, this brown shell can be separated from the kernel and the green brain can be obtained.

How to remove the brown crust on the kernel?

In order to remove the thin skin on the kernel, this skin must be softened first. For this purpose, the kernel is first placed in hot water for one to two minutes to soften the skin on the kernel.
Then, with the pressure of the fingers, it is easy to separate this shell from the kernel. Of course, this requires patience.
To increase the speed of the operation, you can pour some of the kernels into the palm of your hand, and by rubbing the palms of both hands, the shell is easily removed. After separating, the brains should be dried.
To dry the nuts, spread them in a thin layer on a clean cloth and leave them in the shade and exposed to the open air to dry.
